Bacon Wrapped Asparagus


Ta da! It's delicious.
Just wash the asparagus, wrap it up, grill it up. I'd say about ten minutes on the grill, low-medium heat.

Potato Salad

This is "Kim's" recipe we have floating around, but it looks like it's really "Catheryn's". Haha. Either way, it's yummy. 
Kim says she sometimes makes extra dressing to ensure the salad is creamy - not sticky. 
I  like to add chopped celery. 
Frozen peas are also an option.

chipotle chicken skewers with creamy dipping sauce

WE had these for father's day and they were GOOD!  I kinda wanted the kids to not eat them so we could have more.  But even my kids, who don't love meat, liked them.

Again, I thought I wouldn't like these because I'm not a huge fan of chipotle peppers and adobo sauce, but I loved them.  So super duper good, and the chicken stands on it's own, you almost don't need the dipping sauce, it certainly wasn't the best part of the meal, for me.

I even think you could just marinade the chicken and not skewer it, but I don't like fat chicken, so I would take the extra effort to skewer it.  We did have a problem with slightly overcooked chicken, it was a little dry, because it cooks really fast, so beware.  Also, the dipping sauce makes a ton, and we didn't even eat half of it.  So next time I will half the recipe.

Chipotle Chicken Skewers with Creamy Dipping Sauce
Yield: Makes about 15-16 skewers, serving 6-8
You could definitely use full-fat sour cream or mayo/yogurt, but I'll attest that the sauce was divinely yummy made with reduced fat ingredients. Chipotle chiles in adobo sauce can be quite spicy so if you want to knock the spice down a bit, scrape the seeds out of the chile and discard before mincing the chile for the marinade/dry rub.
Ingredients
    Chicken Skewers:
  • 2 1/2 pounds boneless, skinless chicken breasts (4-5 medium chicken breasts)
  • 1/4 cup packed light brown sugar
  • 2 tablespoons fresh cilantro, minced
  • 1 chipotle chile in adobo sauce, minced (scrape out the seeds before mincing to reduce spiciness)
  • 2 teaspoons adobo sauce
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 12 bamboo or metal skewers
  • Creamy Dipping Sauce:
  • 3/4 cup lowfat sour cream
  • 1/4 cup lowfat mayonnaise or Greek yogurt
  • 1/4 cup lime juice, from 2-3 limes
  • 1/8 teaspoon garlic powder
  • 2 tablespoons cilantro leaves, minced
  • 2 green onions, finely chopped
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
Directions
  1. Slice the chicken breasts into long, thin strips, about 1/2-inch thick. You should have right around 30 strips. In a small bowl, stir together the brown sugar, cilantro, chipotle chile, adobo sauce, salt, chili powder, garlic powder, and pepper. Toss the chicken with the brown sugar mixture coating all the pieces evenly. Cover the chicken (or place in a ziploc bag) and refrigerate for at least 30 minutes and up to 24 hours.
  2. For the dipping sauce, in a bowl, stir all the ingredients together. Cover the mixture and let stand at room temperature for 30 minutes until the flavors combine. Alternately, you can make the dipping sauce in advance and refrigerate for up to 2 days. Be sure to season the dipping sauce with additional lime juice, salt and pepper to taste before serving.
  3. 30 minutes before grilling, cover the bamboo skewers with water and soak. Skip this step if using metal skewers.
  4. Preheat an oven broiler or gas/charcoal grill. Weave two strips of chicken onto each skewer. Broil or grill the chicken for 5-8 minutes until cooked through, using nonstick cooking spray on a foil-lined pan if you are broiling. Serve immediately (if you broil, you may need to cook in batches) with the dipping sauce.

Flank steak

Andy's grandpa always used to make flank steak supposedly, it's kind of tradition in his family. I've never had it, but I have his recipe and have made it a few times in the last year. Super easy. I'm sure there's a better, more complex recipe somewhere out there, but this is so quick and really good.

Poke holes every few inches in steak with a fork. Sprinkle thyme on a flank steak and cover with soy sauce (I marinade mine in a ziplock bag, you can do it in a cake pan too). Let marinade for 4 hours or whatever. Grill. Cut very thinly against the grain-this cut of meat is very very lean and can be tough, so this step is absolutely necessary.

Grilled Sweet Potatoes

This is no original/earth shattering recipe, but since they were so good, I thought that by posting it here, you will be inspired and encouraged to try it :). We had these for Reese's birthday dinner.

I bought sweet potatoes thinking we would have them mashed with dinner, but just the thought of my stove/oven being on made me sweat. Since we were grilling everything else, I decided to try grilling these. It's my new favorite way to have sweet taters.

I just searched for a recipe and found one to help me out here. But here's mine because I didn't have all the spices it called for. I baked them instead of boil them to "parboil" them. I'm sure they would be good with just s&p too.

Here's what I did:

Grilled Sweet Potatoes



3 medium sweet potatoes (or however many you want)
1 tsp sea salt
1 tsp cumin
1/2 tsp coriander
1/2 tsp cinnamon
1 tsp brown sugar
2 T apple cider vinegar
1/4 c evoo

Start by slightly cooking sweet potatoes in the oven (ya, ya ... I defeated the purpose of grilling them to avoid using the stove, but it wasn't on for long so it was ok). I cut a "slit" in the middle of each potato to help with even cooking/softening. Place sweet potatoes in 400* oven. Cook until potato is softened, but not cooked the whole way through ... I honestly have no idea how long this took b/c I was busy doing other things. Maybe 15 min??

While potatoes are in the oven, mix the salt, spices, sugar, vinegar, and oil together in a small bowl.

Once the potatoes are softened, remove from oven. Peel potatoes and cut in 1/4 in slices. Brush both sides with spice mixture.

Grill until cooked through and have pretty grill marks.

Devour.

THE best pork tenderloin you will ever have.

we made this for 4th of july. it was soooo delish. (i marinated mine <8hrs)

we had grilled veggies with it (red pepper, zuchinni, and asparagus) --- my current favorite way to eat veggies. i grill them like in mary's post below. andy even loves veggies when they are grilled.

Citrus and Soy-Marinated Grilled Pork Tenderloin


*Serves 6
2-3 pounds pork tenderloin
3/4 cup olive oil
1/3 cup soy sauce
2 tablespoons Worcestershire sauce
1 tablespoon dry mustard
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons red wine vinegar
1 teaspoon dried parsley flakes
2 cloves garlic, finely minced
2 tablespoons freshly squeezed lemon juice (from about 1 lemon)
Combine all the ingredients except the pork and mix well. Pour the marinade into a ziploc bag or baking dish and add the pork tenderloin, making sure the marinade completely covers the pork. Marinade for 8-10 hours.
Preheat an outdoor grill (charcoal or gas). Grill the pork tenderloin about 3-4 minutes on each of its four sides (the exact time will depend on the temperature of your grill) or the internal temperature is about 150 to 155 degrees. Remove from the grill, tent with foil, and allow to rest 10 minutes before slicing and serving.

Sticky Coconut Chicken


We made this recipe for dinner a few nights ago. She uses chicken thighs, which are great. We decided to make kabobs instead this time. It turned out so good. It's pretty spicy though, so you might want to skip the last glazing part if you have kiddies eating it. I hate turning my oven on during the Summer, so this is a great way to keep the heat outside.


Sticky Coconut Chicken

6-8 boneless, skinless chicken thighs
1 cup canned coconut milk
1 Tbsp. minced fresh ginger
1 tsp. fresh ground pepper
1 tsp. red pepper flakes
Marinade chicken in coconut milk, ginger, pepper and red pepper flakes at least one hour (I let mine marinade four about four to five hours). Grill on barbecue.
Glaze:
3/4 cup rice vinegar
1/2 cup sugar
3 Tbsp. soy sauce
1 tsp. red pepper flakes
While the chicken is grilling, bring above ingredients to a boil over medium-high heat and cook until mixture is reduced and thickened, about 8-10 minutes. Be patient because it takes a little while. But once it starts getting really thick, immediately take it off the heat! Glaze both sides of chicken the last few minutes of grilling and serve chicken over rice.
Sidenote: I used the extra coconut milk left in the can as part of the liquid in my rice and it was unbelievable! It was very mildly sweet and paired so well with the chicken. Yum!
