Chicken Burrito Bowls

If you have an instant pot, this is for you. Super easy, really good, and my kids all loved it. So it's a winner. I honestly can't figure out if I love my instant pot or not. For some things I do --- like this quick, one pot meal and mashed potatoes, but I don't like cooking roasts or plain chicken in it. I just prefer the crock pot/slow cooker for that. But this reminded me that I need to find more recipes like this one to use it. It was soooo easy and quick clean up.



  • 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks (I used 2 chicken breasts, whole. I didn't even read that I was supposed to cut them into 1 inch chunks, but I wouldn't have anyway. But next time I will cut them in half just so they cook more and fall apart more easily)
  • 1 (1.25-ounce) package taco seasoning
  • 1 cup low sodium chicken broth, divided
  • 1 (15-ounce) can corn kernels, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup salsa, homemade or store-bought
  • 1 (4.5-ounce) chopped green chiles
  • 1 cup long-grain rice
  • 1 cup shredded Mexican blend cheese
  • 2 tablespoons chopped fresh cilantro leaves

DIRECTIONS:

  1. Add chicken, taco seasoning and 1/4 cup chicken broth to a 6-qt Instant Pot® and gently toss to combine. 
  2. Stir in corn, black beans, salsa and green chiles.
  3. Without stirring, add rice and remaining 3/4 cup chicken broth.
  4. Select manual setting; adjust pressure to high, and set time for 10 minutes. When finished cooking, quick-release pressure according to manufacturer’s directions. Stir in cheese until melted, about 1 minute. Here's what I did here after it was done cooking:  fluff rice with a fork and let it sit before mixing it all together so it's a better texture. Then I pulled the chicken breasts out, shredded the meat, and served separately ... just cause that's how I wanted it. Then I mixed the corn, beans, and rice together. I also served the cheese on the side, so it didn't make it a big ball of cheese in the fridge. 
  5. Serve immediately, garnished with cilantro, if desired.

Cafe Rio Pork

This is the best homemade Cafe Rio I've had.  The recipe I used to use was just cooking it in a crock pot with brown sugar and soda I think. This one is marinated, then cooked in coke and water, and finished with more of a "sauce" I guess you could say.

Ingredients
  • 2 pounds pork (we use boneless pork rib meat)  --- I used like 4lb sirloin roast.
  • 3 cans Coke (NOT diet)
  • 1/4 c. brown sugar
  • dash garlic salt
  • 1/4 c. water
  • 1 can diced green chilies
  • 3/4 (10oz) can red enchilada sauce (I use Old El Paso brand, medium spiciness but any will work)
  • 1 c. brown sugar
Instructions
  • Put the pork in a heavy duty ziploc bag to marinade. Add about a can and a half of coke and about 1/4 c. of brown sugar. Marinade for a few hours or overnight. (I used a bigger roast, so I put it in a bowl and poured Coke in until it was covered.)
  • Drain marinade and put pork, 1/2 can of coke, water, and garlic salt in crock pot on high for about 3-4 hours (or until it shreds easily, but don't let it get TOO dry) or on low for 8 hours. Remove pork from crock pot and drain any liquid left in the pot. Shred pork.
  • In a food processor or blender, blend 1/2 can Coke, chilies, enchilada sauce and remaining brown sugar (about a cup, you can add a little more or less to taste..). If it looks too thick, add more Coke little by little.
  • Put shredded pork and sauce in crockpot and cook on low for 2 hours. That's it!




We made salads and tacos.  I discovered uncooked CORN tortillas last year and use them all the time.  I don't usually like dry, fall apart easily regular ones, but these are to die for! So much better than even the flour ones.  http://www.tortillaland.com/tortillas/corn-tortillas

Slow Cooker Jalapeno Popper White Bean Chili

This will be a regular in our house. It's a slight variation from Kelli's white chili, which I love.
It doesn't necessarily have to be a slow cooker recipe, either. If you have a rotisserie chicken, use canned beans, and saute the veggies for a little bit, it could be a 30 minute meal.

Slow Cooker Jalapeno Popper White Bean Chili
Yield: Serves 6-8

Ingredients
  • 1 cup chopped yellow or white onion
  • 2 jalapeno peppers, seeded and finely chopped
  • 3 cloves garlic, finely minced or pressed
  • 1/2 cup red or yellow bell pepper, small diced
  • 1 pound chicken breasts, trimmed of fat (about 2 chicken breasts)
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 (14-ounce) can diced tomatoes, undrained
  • 4 cups low-sodium chicken broth  (I kept this the same, but was worried it would be too much liquid since I didn't use dry beans. It ended up being perfect for me, though).
  • 12 ounces dry white beans, rinsed and picked through to remove any stones or bad beans (I just used 2 cans of white beans, drained and rinsed)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 ounces light cream cheese, cut into cubes
  • 1 cup frozen corn kernels (i used 1 can, drained)
  • 6-8 slices bacon, cooked and crumbled or chopped
Directions
  1. Add all the ingredients except the cream cheese, corn and bacon to a 5-quart slow cooker. Cook on low for 7-9 hours (I did 4-6 hoursish since my beans were already cooked).
  2. Remove the chicken and chop into pieces or shred into bite-sized pieces. See the note above about thickening part of the soup. Make your decision. Then return the chicken to the slow cooker.
  3. Stir in the cubed cream cheese and the corn. Cover the slow cooker to let the cream cheese soften and the corn heat through, about 10-15 minutes.
  4. Stir to combine. Add additional salt and pepper to taste. Serve topped with the crumbled bacon.

Smothered Pork Chops

Mom told me about this recipe. Best pork chops ever. And pretty easy. We love these. Are we getting burned out from this girl's recipes on here? haha.

I used the bacon the first time I made these, but never since. I think they are just as good without and I loathe cooking bacon anyway.

Ingredients
  • 5 slices bacon, chopped (I don't use)
  • 6 bone-in pork loin chops, about 3/4-inch thick (I use 4 thick ones, about 1 1/4-1 1/2" thick)
  • Salt and Pepper
  • 2 yellow onions, peeled, halved and sliced into 1/2-inch thick half moons
  • 1 teaspoon plus 1 tablespoon light brown sugar
  • 1/4 cup plus 2 tablespoons cold water
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 3 cups low-sodium chicken broth
  • 1 tablespoon soy sauce
  • 2 bay leaves
  • 1 tablespoon cornstarch
  • 1 tablespoon cider vinegar
  • 2 tablespoons fresh parsley, chopped (don't waste your time with this...)
Directions
  1. In a large skillet over medium heat, fry bacon until lightly browned, about 5-6 minutes. Transfer bacon to a plate lined with paper towels, leaving the drippings in the pan. If you have more than 2 tablespoons drippings, drain the excess. If you don’t have quite that much, supplement with canola oil. When the bacon is cool, transfer to a small bag or tupperware and refrigerate until later.
  2. Heat the skillet with the drippings over medium or medium-high heat until rippling and hot. Meanwhile, pat pork chops dry with paper towels and sprinkle with salt and pepper. Cook pork chops until they are golden brown on each side, about 2 minutes per side, cooking them in batches in the skillet if your skillet isn’t big enough to hold all six at a time in a single layer. When golden on each side, transfer the chops to the slow cooker and repeat with remaining pork.
  3. Pour off all but 1 teaspoon of fat from the skillet; add onions, 1 teaspoon brown sugar, 1/4 teaspoon salt and 1/4 cup water to empty skillet. Using a wooden spoon, scrape browned bits from bottom of the pan and cook over medium-high heat until onions are soft, about 4-6 minutes. Stir in garlic and thyme and cook until fragrant, about 30 seconds. Pour onion mixture over chops in the slow cooker. Add broth, soy sauce and remaining 1 tablespoon brown sugar to skillet, bring to a boil and add bay leaves. Pour mixture over onions in slow cooker.
  4. Cover slow cooker and cook on low until pork is tender, about 8 hours (or cook on high for 4 hours).
  5. When ready to serve, carefully transfer chops to serving platter with a large spoon and tent with foil. Discard bay leaves and pour liquid through a mesh strainer into a saucepan, reserving the solids. Transfer solids to a food processor or blender with 1 cup liquid and blend until smooth. (I don't strain or blend up the sauce at all ... i like it chunky and don't want to dirty another appliance anyway). Stir the blended mixture back into remaining liquid in the saucepan. In a small bowl, mix cornstarch and remaining 2 tablespoons water together in a small bowl and stir into sauce. Cook over medium heat until thickened and bubbly, about 5 minutes. Stir in vinegar, season with salt and pepper, pour over chops and sprinkle with reserved bacon and parsley. Serve.

I estimated the calories of the sauce only. Obviously there's some fat from the pork chops that will cook into the sauce, but this is a good estimate.

1/4 cup sauce only = 55 kcal

Pot Roast

I've found it. The best pot roast ever.
I've never really liked the other recipes. They're always too salty (onion soup mix) or weird looking (cream of mushroom). But this one is herbaceous and beautiful. I just really loved it.

It's from pioneer woman. Here is a link to her step by step instructions. I used a crock pot.

Here is the recipe:
  • 1 whole (4 To 5 Pounds) Chuck Roast
  • 2 Tablespoons Olive Oil
  • 2 whole Onions
  • 6 whole Carrots (Up To 8 Carrots)
  • Salt To Taste
  • Pepper To Taste
  • 1 cup Red Wine (optional, You Can Use Beef Broth Instead)
  • 2 cups To 3 Cups Beef Stock
  • 3 sprigs Fresh Thyme, or more to taste
  • 3 sprigs Fresh Rosemary, or more to taste

Preparation Instructions

First and foremost, choose a nicely marbled piece of meat. This will enhance the flavor of your pot roast like nothing else. Generously salt and pepper your chuck roast.
Heat a large pot or Dutch oven over medium-high heat. Then add 2 to 3 tablespoons of olive oil (or you can do a butter/olive oil split).
Cut two onions in half and cut 6 to 8 carrots into 2-inch slices (you can peel them, but you don’t have to). When the oil in the pot is very hot (but not smoking), add in the halved onions, browning them on one side and then the other. Remove the onions to a plate.
Throw the carrots into the same very hot pan and toss them around a bit until slightly browned, about a minute or so.
If needed, add a bit more olive oil to the very hot pan. Place the meat in the pan and sear it for about a minute on all sides until it is nice and brown all over. Remove the roast to a plate.
With the burner still on high, use either red wine or beef broth (about 1 cup) to deglaze the pan, scraping the bottom with a whisk to get all of that wonderful flavor up.
When the bottom of the pan is sufficiently deglazed, place the roast back into the pan and add enough beef stock to cover the meat halfway (about 2 to 3 cups). Add in the onion and the carrots, as well as 3 or 4 sprigs of fresh rosemary and about 3 sprigs of fresh thyme.
Put the lid on, then roast in a 275F oven for 3 hours (for a 3-pound roast). For a 4 to 5-pound roast, plan on 4 hours.

Then I turned the left over juice into a gravy and it was so so good. I could drink it. I just started about 2 T butter and 2 T flour in a saucepan for thickening, then added the juice.

Plus the carrots...were so good. I ate them like candy. You know you've got a good pot roast when the carrots are divine.

I think I would serve this with mashed potatoes in the future so that I can use more of the gravy.

Hamburger Hot Pot

I don't know if this qualifies to be on here, but my kids love it, it's pretty basic meat and potatoes.

1 1/2 lb ground beef
6 med. Potoes, peeled and sliced
¼ tsp garlic powder
3 med onions sliced
1 tsp salt
1 can mushroom soup
¼ tsp pepper
½ cup water
(I add a layer of carrots and sometimes some mushrooms)

Brown ground beef and add seasonings to the meat. Stir together soup and the liquid you are using. In crock pot layer 1/2 potatoes, 1/2 carrots, 1/2 onions, all of the beef, potatoes, carrots, onions, then liquid.

I usually add milk instead of water and a little sour cream. I also sprinkle on paprika and seasoning salt. Cook on high for 2-3 hours or on low 6ish maybe. My crock pot cooks really hot, so yours might take longer.

Caramel in a Crockpot

Take an unopened can of Sweet and Condensed Milk (regular or non fat),
Put it in the crockpot,
Fill the crockpot with water until the can is completely submerged,
Turn it on low for 8 hours,
Open and use for dippin.

Warning! When you open the can, contents will be under pressure, so keep your face/eyes out of the way of any "spitting". I learned that the hard way.

Meatballs with Sauce on Them

Put a bunch of meatballs in the crockpot (I like the Costco ones),
a cup and a half of salsa,
a cup and a half of grape jelly,
cook on low for a few hours.
I'm not saying this is the most gourmet meal you will ever eat, but it's easy and tasty.

You can serve them over rice, but I've come to realize I don't like rice. It's so weird. I think it has to do with throwing it up while pregnant. (I'm not pregnant).

Emily you could add this to your "grease fest" spread come Christmas.

White Bean Chili


2-3 chicken breast cooked, chopped
1 medium onion, chopped
1 can chicken broth
2 cans white beans rinsed
1 can (4 oz) chopped green chilies
1 1/2 tsp. powdered garlic
1-2 dashes cayenne pepper
1 tsp. cumin
1 tsp. oregano
1 tsp. salt
1/4-1/2 tsp. pepper

20 mins before serving add:
1 c. sour cream (best if you use regular, not light)
Handful of chopped cilantro

Throw it all into the crockpot. Cook on low 5ish hours. 
I love it with cornbread.

Crock Pot Chicken Parmesean

This was a hit with the whole entire family. Yum.

2-4 boneless, skinless chicken breast halves (I cut mine into strips, to make them into more reasonable serving sizes for the kids)
1/2 cup plain bread crumbs
1/2 cup grated Parmesan cheese
1 tsp. Italian seasoning
1/4 tsp. ground black pepper
1/4 tsp. kosher salt
1 Tbs. olive oil
1 egg, beaten
4-6 slices mozzarella cheese
1 jar (28-ounces) favorite marinara sauce

Directions:
Drizzle 1 tablespoon olive oil over the bottom of the crockpot stoneware.
In a medium bowl, beat egg. In second medium bowl, mix the bread crumbs, spices, and grated Parmesan cheese all together.

Dip chicken in beaten egg and then toss into bread crumb mixture to coat completely on both sides. Place chicken breasts on bottom of crockpot. Place a layer of mozzarella slices on top of breaded chicken breasts. Cover cheese layered chicken with entire jar of sauce.

Place lid of crockpot securely on and turn heat to LOW for 6-7 hours or HIGH for 3-4 hours. Serve over cooked pasta of your choice.

honestly, when i tasted this plain, i was like --- 'meh ... not great, but pretty good'. but then we made burritos with it (just tortilla and sour cream) and YUM! plus, it's just so easy (probably what makes it so good). and sammy loved it too. we also dipped some chips in it and that was way good too. it was a good dish for andy to take to work.


do we all love that website or what? i notice we all get recipes from it. it's my favorite (thanks mary). very trustworthy :).
