mango quinoa salad

made it and totally loved it!!! just my two cents about it though: too many beans, i'll add less next time. too little mango, i put 3 in and wanted more! so good though.
we used to not like mangoes because we had never had the good kind of mangoes. we got the good kind in a bountiful basket a few times and they are like candy. totally good.  costco has them too.

anyway, here's the recipe:

Mango Quinoa Salad


2 cups cooked quinoa* at room temperature, or chilled
1 14 oz can black beans, drained and rinsed
1 medium mango, peeled and diced
1 red bell pepper, diced
6 green onions, thinly sliced
1 handful chopped cilantro (about 1/2 cup)
4 tablespoon red wine vinegar
3 tablespoons extra virgin olive oil
1-2 tablespoons fresh lime juice
kosher salt
freshly cracked black pepper


Place cooked quinoa in a large bowl.  Add mango, red pepper, green onion, black beans, and cilantro.  In a small bowl combine vinegar, olive oil, and lime juice.  Whisk until smooth and pour on top of salad.  Toss to combine and add salt and pepper to taste.  Chill for at least one hour before serving.

NOTE (8/4/11): i take back my snobby mango comments. we made this at mom's house and used the other kind of mangos. they were totally good (but not AS good) and had way more "meat" on them. maybe i just didn't like them at all before ...

ok a few things...
#1. i made this today and something in it was sooo bitter. i tasted each thing to see what it was. cilantro, pepper, onion...turns out it is the quinoa. have any of you ever had that problem? it is really really bitter. like, i might toss the whole dish.

#2. i used fresh pinapple instead of mango and it is a great substitute if mangos are never ever in season/ripe at your store either.

#3. i added queso fresco to it, and oooh boy, it might be my favorite part of the salad.

#4. i paired it with that spicy coconut chicken, and put the leftover coconut milk in the salad, and it was also good. just the bitter quinoa ruined everything.

#5. i grilled the rest of the pinapple on sishcebabs and that's always good.

#6. i'm the only one who ate this labor intensive meal. (jim's working late)...so yeah. wish one of you could have come over to eat with me. evan skipped a nap and was literally falling asleep in his chair, and avery eats - just not dinner at the dinner table.

#7. i am sooo full because i couldn't stop eating the chicken b/c the glaze is too yummy. i could almost drink it.

#8. is mom out of town? i called and left a message, but she didn't call back which is not like her.

Did you rinse your quinoa? If you don't, sometimes it has a bitter taste. If you did, maybe you aren't used to the taste of it??? It has a very distinct flavor I think. Funny you say labor intensive... I think this is a super easy dish. Ohhh... Wait. You made chicken too. NM.

You definitely need to try it with mango next time you make it. Not that pineapple wouldn't be good, but mangos are like.. To die for in this. Maybe I will put it on our menu this week.

darn...i didn't rinse it. note to self for next time.

it's just labor intensive b/c all the elements of the salad, chicken, shis kebabing, cutting up a pinapple, making the glaze. a lot of elements. well more than i like to do for a meal.

next time, i'll just throw white chicken chili in the crock. that's my favorite meal anyway.
