Vegetables

What's your family's favorite and/or most common vegetable dish to make it to the dinner table (and the recipe).

Ours:  

Grilled (or roasted) Asparagus --- evoo, salt, pepper. Grill.
 or
Kim's Carrots and Onions --- in the family cookbook.
 or
Roasted Carrots and Onions --- evoo, salt, pepper, sometimes a little Italian seasoning. Roast.

We still have tons of red potatoes from our garden, so we roast them up with evoo, salt, pepper, rosemary and thyme.

I'm not very creative with the regular veggies, but I have a few things I love to do with yams and potatoes:

Peal and dice up some yams and regular potatoes (I like more yams than potatoes). Buy a package of liptons onion soup mix and follow the recipe on the box for roasted potatoes(or whatever it's called)yum yum. or...

Peal and dice some yams and potatoes (again) boil them, mash them, add a little butta, some sour cream, and s&p to taste. You've got mashed potatoes that taste so good you have no need for the gravy.

we do a lot of roasted veggies...pretty much whatever we have. lately it's potatoes and sweet potatoes.

my kids love edamame, adn that is super easy.
